This is the perfect recipe for a quick weeknight meal when hamburger cravings ensue but your diet is a priority! Feel free to adjust ingredients to taste, with more salt, pepper or garlic as you like. These make for a great meal on their own, but I prefer to serve over wheat pasta with a low-calorie pasta sauce.

 

Lean Mean Meatballs

Start to finish: 15 minutes

Servings: 2

 

3 tablespoons olive oil

½ pound ground 80% lean ground turkey

1 egg

½ cup breadcrumbs

1 tablespoon cilantro

¼ medium onion, chopped

1 clove garlic

1 teaspoon salt

1 teaspoon pepper

 

Heat olive oil in skillet on medium-high.

In a large bowl, combine the ground turkey, egg, breadcrumbs, cilantro, onion, garlic, salt and pepper and mix until well incorporated.

Divide the meat into 1-inch balls. Place meatballs in the skillet and allow to cook until browned, about 4 minutes on each side.

To serve, place on top of pasta and sauce of your choice.
